SPICY SESAME CHICKEN | |
2 chicken breasts (1 lb. cubed, boneless, skinless) 3 tbsp. sherry, divided 1 tbsp. soy sauce 1 tbsp. cornstarch 1 1/4 tsp. fresh ginger, grated, divided 2 tbsp. sesame seeds 3 sm. mushrooms, chopped 1 c. snow peas 1 scallion, chopped 1/2 tsp. crushed red pepper 2 tbsp. hoisin 1/4 c. peanut oil Marinate chicken in mixture of 2 tablespoons sherry, soy sauce, cornstarch, 1/4 teaspoon ginger and sesame for 1 hour. Fry chicken in peanut oil for 2 minutes, drain. Add hoisin, 1 tablespoon sherry, mushrooms, 1 teaspoon ginger and red pepper, and stir 2 minutes. Add snow peas and scallions. Stir one minute before adding chicken. Stir until coated. |
