ZUCCHINI BARS 
2 c. shredded zucchini
1 c. vanilla protein powder
6 Bran a Crisp, finely ground
4 eggs
1/2 tsp. cinnamon
1/2 c. nonfat dry milk
1 1/2 tsp. vanilla
3/4 tsp. baking soda
2 tsp. D. C. Lite Sweetener

Mix all ingredients in a large bowl. Pour into a 9"x13" pan, sprayed with Pam. Bake approximately 30 minutes at 350 degrees. Cut into 8 pieces.

Yield: 8 servings, each equals 1/8 cooked vegetable, 1/2 bread, daily milk allowance.
