BEST ZUCCHINI BARS 
2 c. sugar
1 c. oil
3 eggs
2 c. flour
1 tsp. cinnamon
1 tsp. salt
2 tsp. baking soda
1/4 tsp. baking powder
1 tsp. vanilla
2 c. shredded zucchini
1 sm. carrot, grated
3/4 c. oatmeal
1 c. nuts, chopped (opt.)

Mix in order given and bake in 15 x 10 x 1 inch pan. Bake at 350 degrees for 20 to 25 minutes. Cool and frost.

FROSTING:

1/2 c. soft butter
1/4 tsp. almond extract
2 tsp. vanilla
2 1/2 c. powdered sugar
1 (3 oz.) cream cheese, softened

Beat all ingredients until well blended and frost bars.
