BANANAS FOSTER ALA COURT OF TWO
SISTERS, ROYAL ST., NEW ORLEANS
 
4 tbsp. unsalted butter
4 tbsp. brown sugar
2 ripe bananas, peeled & cut into coins
1/4 tsp. cinnamon
2 banana liqueur
3 oz. light or dark rum
1 1/2 c. to pt. ice cream

Melt butter in skillet. Add brown sugar and stir until sugar is melted. Add bananas and saute until tender, about 3 minutes. Sprinkle with cinnamon.

Pour liqueur and rum over raisins, shake pan to distribute the liquid and flame. Baste bananas with the flaming sauce until flames die out. Serve immediately over ice cream. Serves 2.
