STUFFED PEPPERS | |
6 med. or 3 lg. green peppers 1 matzah, broken into sm. pieces, or 3/4 c. matzah forfel 1/4 c. water 1 lb. ground beef 1 egg, slightly beaten Salt Freshly ground pepper 1/4 c. onion, minced 2 c. tomato sauce 1/4 c. water Wash peppers, remove tops and seeds. Parboil and drain well. If large ones are used, cut in half lengthwise. Soak matzah in 1/4 cup water. Add beef, egg, salt, pepper, onion and 1/4 cup tomato sauce. Fill peppers, place in baking dish with cut side up. Pour balance of sauce over peppers. Add remaining water to the pan and bake in moderate oven (375 degrees) for 1 1/4 hours or until tender, basting occasionally. Serves 6. |
