STUFFED POTATOES 
2 lg. baking potatoes
1/4 c. plain non-fat yogurt
2 tbsp. grated Parmesan cheese
1/2 tsp. salt
Dash of pepper
Vegetable cooking spray
2 tbsp. minced chives
1 tbsp. skim milk
1/8 tsp. garlic powder
1/4 tsp. paprika

Wash potatoes and spray with cooking spray. Bake at 375 degrees for 1 hour or until done. Let cool to touch. Cut potatoes in half lengthwise. Scoop out pulp, leaving a 1/4 inch shell. Set shells aside. Combine potato pulp, yogurt, and next 6 ingredients in a medium bowl; mash until light and fluffy. Pipe or spoon potato mixture into shells. Place potatoes on an ungreased baking sheet. Sprinkle with paprika and bake, uncovered, 10 minutes or until thoroughly heated.
