CHICKEN ENCHILADA 
1 bag Doritos
4 chicken breasts, cooked (deboned and skin removed)
1 can Rotel tomatoes
1 can cream of celery soup
1 can cream of chicken soup
2 c. grated cheese (Longhorn, Cheddar, or low fat)
2 tbsp. Hot Pace Picante (optional)

Use a 2-quart or 3-quart baking dish (this is a layered recipe). Crunch up Doritos; place a layer in bottom of ungreased baking dish. Shred chicken breasts and put a layer over crunched Doritos.

Mix soups and chopped or squished Rotel tomatoes (if you desire hotter dish, use a couple tablespoons Pace Picante sauce). It is a normal spicy dish without Pace Picante; even children can enjoy.

Place layer of soups and Rotel tomatoes over chicken and Doritos, then a layer of grated cheese. Repeat this mixture. Bake at 350 degrees for approximately 30 minutes or until hot and bubbly. Serve with salad as a complete meal. Serves 6-8.
