MEDITERRANEAN POTATO SALAD 
6 sm. potatoes, cooked
1/4 c. onion, finely chopped
3 c. zucchini, diced
12 cherry tomatoes, halved
4 tbsp. lemon juice
4 tbsp. salad oil
2 tsp. basil leaves
1 1/2 tsp. salt
1/4 tsp. garlic powder
1/2 tsp. pepper

Cook potatoes; drain and chill. Cube potatoes and combine with onions, zucchini and tomatoes and toss lightly.

Combine remaining ingredients in separate bowl and blend. Pour dressing over potato mixture and toss gently. Refrigerate. Serves 6.
