ZUCCHINI BREAD | |
1 c. oil 3 eggs 2 c. sugar 2 tsp. vanilla 3 tsp. cinnamon 3 c. zucchini, shredded (unpeeled) 1 c. chopped nuts (walnuts are best) 1 c. chopped dates (raisins may be used) Combine oil, eggs, sugar and vanilla until well blended. Add dry ingredients (no sifting is necessary) and mix until well blended. Stir in a greased angel food or Bundt cake pan at 350 degrees for approximately 1 hour and 20 minutes or until toothpick comes out clean. Cool 45 minutes before removing from pan. Two 9 x 5 inch loaf pans may also be used. Shorten baking time to 45 to 50 minutes. |
