SPINACH MOLD 
1 pkg. (3 oz.) lime Jello
1 c. hot water
1/2 c. cold fruit juice
1 tbsp. vinegar
1/2 c. mayonnaise
1 c. chopped spinach
1/3 c. chopped celery
3/4 c. cottage cheese
1 tbsp. chopped onion

Dissolve gelatin in hot water. Add fruit juice, vinegar, mayonnaise; blend. Refrigerate to jell but not hard. Whip with beater until fluffy. Fold in rest of ingredients. Pour into 1 quart mold and chill until firm. Serves 6 or 8.
