GERMAN COOKIES (LENSA DOUGH) 
1 lb. butter
1 c. sugar
6 egg yolks (save whites)
1 whole egg
Squeezed juice from 1/2 lemon
1 whole lemon rind, grated
2 tbsp. whiskey
6 c. flour
2 c. finely ground nuts
3/4 c. sugar

All ingredients must be at room temperature. Mix softened butter, sugar and egg yolks plus whole egg and lemon juice, rind and whiskey. Add flour and mix. Roll out on floured board to 1/2 inch thickness. Cut with small cookie cutters. Mix ground nuts and sugar together. Beat two egg whites lightly. Dip top of cookie in egg white, then in nut mixture. Bake at 325 degrees for 20 to 25 minutes on lightly greased pan.
