BAKED CHICKEN (For 6) 
10 chicken legs with thighs or breasts (or both, mixed)
8 med. white potatoes
1 lg. sweet potato (optional)
1 lg. or 2 med. onions
1 c. green peas (1 sm. can drained or 1 c. frozen)
1 tsp. black pepper (to taste)
Salt (to taste)
1-2 tsp. basil
2 tsp. garlic powder or garlic chunks
2-3 tsp. olive oil
3/4 c. water

1 large rectangle pan.

Clean chicken (if desired remove skin). Place in pan. Peel potatoes and cube or leave in quarters. Place in pan. Peel onion and cut in small wedges. Place in pan. Core pepper and cut into cubes. Place in pan. Put in spices. Sprinkle olive oil over entire pan. Add water. Bake 375 degrees for 2 hours and food is golden. Turn food every 1/2 hour.

You can do pork chops, lamb chops (add 3/4 cup vinegar), sausages (add green pepper).

This recipe can be stretched for as many as 12 people. The meat for unexpected company.
