5 env. unflavored gelatin 3 c. sugar 1/4 tsp. salt 2 1/4 c. water 1 tsp. cinnamon extract 6-10 drops red food color 3/4 c. or more granulated or confectioners' sugar Blend gelatin, sugar and salt with water in medium saucepan; bring to boil, stirring until gelatin and sugar are dissolved; cover and simmer for 15 minutes. Dissolve gelatin sugar mixture in 2 equal parts. To 1/2 of mixture add cinnamon extract and red color; add peppermint extract and green color to other mixture. Pour each mixture into an 8"x4" pan. Place, uncovered in cool place (not refrigerator) overnight to set until firm. To unmold, loosen jelly around edges of pan with moistened sharp knife. Remove with spatula onto sugar sprinkled wooden board. Cut into cubes. Coat all sides of jellies with sugar. Makes about 5 dozen 3/4" cubes. |
