CAPE AN CHOWDER 
2 c. thin sliced onions
2 tbsp. butter
4 tbsp. flour
2 c. water
2 c. diced potatoes
1 c. sliced celery
1 1/2 tsp. salt
1/4 tsp. pepper
1 1/2 to 2 lbs. cod or haddock, skinned, boned, COOKED & cut in pieces
2 c. milk
2 1/2 c. (10 oz.) American cheese

Cook onions in butter until tender. Blend in the flour. Stir in water, potatoes, celery and seasoning. Cover and simmer 20 minutes or until potatoes are tender. Add remaining ingredients. Stir until the cheese is melted. 6 to 8 servings.
