ROMA MEAT ROLL 
1 1/2 lb. ground beef
1 egg
3/4 c. crushed cracker crumbs
1/2 c. finely chopped onion
2 (8 oz.) cans tomato sauce with cheese
1 tsp. salt
1/2 tsp. oregano
1/8 tsp. pepper
2 c. shredded mozzarella cheese

Combine meat, egg, cracker crumbs, onion and 1/3 cup tomato sauce, salt, oregano and pepper. Mix well and place on approximately 10 x 12 inch piece of wax paper. Flatten meat mixture on wax paper. Sprinkle mozzarella over meat mixture evenly. Roll up using wax paper to start rolling. Press ends of roll and seal shut all edges. Place roll in shallow baking dish. Bake at 350 degrees for 1 hour. Drain off any excess fat. Pour remaining tomato sauce on roll and bake additional 15 minutes. Enjoy!
