CARBONNADE FLAMANDE 
1 1/2 lbs. stewing beef, cubed
3 lg. onions, diced
2 tbsp. butter
1 tbsp. flour
1/4 tsp. dried thyme
1 bay leaf
1 tsp. salt
Pepper
1 bottle (or can) of beer
Vinegar
Sugar
Mustard

Bro wn the meat quickly in the melted butter. Salt and pepper the meat. Remove from pot. Brown the onions; add the flour and stir well. Add the browned meat, herbs and enough beer (or water) to cover the meat. Simmer about 2 hours or until meat is tender. Add a small amount of vinegar, mustard and sugar. Stir well. Serve with boiled potatoes or noodles. Serves 6-8.
