NO-PEEK CHICKEN 
2 to 2 1/2 lbs. chicken, boneless or parts
2 c. rice (uncooked reg.)
1 pkg. Lipton onion soup mix
1 can of Campbell's mushroom soup
1 1/2 cans of water

Place rice in a 9 x 13 inch glass baking dish. Wash chicken and place over rice. Sprinkle Lipton onion soup mix over chicken. In a small bowl, mix mushroom soup with 1 1/2 cans water and pour over above ingredients. Cover tightly with aluminum foil. Place in a 350 degree oven and no-peek for 50 to 60 minutes.

I love this recipe! I use low sodium chicken broth instead of water. The only drawback with this recipe is that it is very salty. I am going to prepare it with low sodium mushroom soup as well. The onion soup alone has 610 mg of sodium per serving and that is more than enough for my family.

@Sandy: All condensed soups are very salty that is why they are diluted down with water. Try adding a few pinches of sugar :)
