QUICK COTTAGE CHEESE DILL BREAD 
2 c. whole wheat pastry flour (or 1 1/4 c. whole wheat flour & 1 1/4 c. unbleached white flour)
2 tsp. baking powder
1/2 tsp. baking soda
3/4 tsp. salt
2 heaping tbsp. minced fresh dill
1/4 c. oil
1/4 c. honey
3/4 c. milk
1 egg, well beaten
1 c. cottage cheese

Preheat oven to 350°F.

In a large bowl, mix the flour, baking powder, baking soda, salt and dill. In a small saucepan combine the oil and honey and heat until just blended. Remove from heat and stir in the milk, beaten egg and cottage cheese. Pour this mixture into the flour mixture and beat just until combined. Do not over beat.

Scrape into a buttered and floured loaf pan and spread the batter evenly with a rubber spatula to prevent any air pockets from forming. Smooth over the top, then give the pan a good thump on your counter. Bake until a wooden pick inserted in center comes out clean.
