QUICK PANCAKES 
2 c. self-rising flour
1 tbsp. sugar
2 eggs
1 1/3 c. milk
4 tbsp. melted butter

Sift together flour and sugar. Beat eggs lightly, stir in milk. Then add melted butter. Add liquids all at once to flour mixture and beat until smooth. Bake on hot griddle until golden brown.

Blueberries or other berries or fruits can be sprinkled on batter after it is poured in pan or on griddle. Makes 10 to 12 (4 inch) pancakes.
