BROCCOLI PUFF | |
2 (10 oz.) pkg. frozen chopped broccoli 1 c. Bisquick baking mix 1 c. milk 2 eggs 1/2 tsp. salt 1 c. (4 oz.) shredded Cheddar cheese Heat oven to 325 degrees. Butter 1 1/2 quart of casserole or 5 1/2 cup souffle dish. Cook broccoli per package directions, drain. Beat baking mix, milk, eggs, and salt until smooth with hard mixer. Stir in broccoli and cheese. Pour into baking dish. Bake until knife inserted half way between center and edge comes out clean, about 1 hour. Serve immediately. 6 servings. CORN PUFF: Substitute 2 (10 oz.) packages frozen corn for broccoli. SPINACH PUFF: Substitute 2 (10 oz.) packages frozen spinach for the broccoli. |
