BUCKWHEAT PANCAKES 
1 c. buckwheat flour
1 c. white flour
1/4 c. cornmeal
1 tsp. baking powder
1 tsp. baking soda
1/4 c. cooking oil
1/2 tsp. salt
1 c. buttermilk or sour milk or 1 c. milk with 1 tsp. vinegar added
1 egg, slightly beaten

Combine dry ingredients in a bowl. Add oil to milk and egg. Stir into dry ingredients. Fry on a hot griddle, turning once, until golden brown and serve with syrup and butter.
