BUTTERMILK PANCAKES 
1 1/4 c. self-rising flour
1/2 tsp. baking soda
1 tbsp. sugar
1 egg
1 1/4 c. buttermilk
3 tbsp. melted shortening

Heat griddle or skillet. Sift together flour, soda and sugar. Add liquid ingredients to dry and stir until just blended, batter will be a bit lumpy. Let griddle heat until a drop of water will dance about it. Pour 1/4 cup batter for each pancake on hot skillet. Bake one side until cake is full of bubbles that have not popped, turn and bake on other side. If batter gets too thick, then with water.

NOTE: If using plain flour sift 2 teaspoons baking powder and 1/2 teaspoon salt with dry ingredients.
