BUTTERMILK PANCAKES 
1 c. all purpose flour
1/2 tsp. salt
2 tbsp. sugar
1 tsp. baking powder
3/4 tsp. baking soda
1 egg, slightly beaten
1 c. buttermilk
2 tbsp. salad oil
butter
Maple syrup

Heat griddle over medium heat. In a medium bowl, sift together flour, salt, sugar, baking powder and baking soda. In a small bowl, beat together egg, milk, and oil. For each pancake, spoon 3 tablespoons of the batter onto heated griddle, spreading each 4 inches in diameter. Cook until bubbles forms on surface, turn and brown other side. Stack 3-4 on heated plates and keep warm. Serve with butter.
