ZUCCHINI CASSEROLE 
6 c. thinly sliced zucchini (2 lbs.)
1 c. chopped onion (sm. onion)
1 pkg. Stove Top stuffing (dressing mixed according to directions)
2 tbsp. oil
1 c. grated carrots
1 c. sour cream
1 can cream of chicken soup

Pour 1/2 of stuffing into 8 x 11 inch pan or casserole. Lightly saute, in the oil, the zucchini and onion. Pour into the pan or casserole over the dressing. Mix thoroughly the grated carrots, sour cream and chicken soup. Pour over the zucchini. Top with remainder of dressing. Bake 35 to 40 minutes at 350 degrees.
