PRIZE WINNING CHILI | |
1/2 lb. bacon 3 lbs. stew meat, chopped into 1/4 inch cubes 2 lg. onions, chopped 1 stalk celery 1 green pepper 8 cloves garlic 1 LARGE can tomato sauce 1 LARGE can tomatoes 3 bay leaves 1 can kidney beans 1 tsp. oregano 1 tsp. cayenne pepper 1 tbsp. paprika 3 green chili peppers (or more if you like it hot!) 1 lg. jar chunky salsa (hot) Trim meat of fat and cut. (It helps if the meat is almost frozen). Cook bacon and remove. Saute onions, celery, green pepper and garlic in fat.. Add beef and cook. Add all other ingredients, including cooked bacon, chopped up - EXCEPT for the kidney beans. Cook 2 hours. Cool in refrigerator overnight. Scrape off fat. Return to stove, adding kidney beans. Cook to thicken. |
