FESTIVE SCALLOPS AND RICE | |
1 3/4 c. water 2 tbsp. butter 1 (6 1/4 oz.) box long grain and wild rice, savory recipe 2 tbsp. fresh lime juice 1 lb. scallops 1/2 green and 1/2 red pepper, cut in thin strips 4 green onions, sliced In medium saucepan, combine water, butter, contents of rice and seasoning packets, lime juice, pepper strips, and onions; bring to a boil. Cover and simmer 5 minutes or until all water is absorbed. Stir in scallops and continue cooking an additional 1 minute, just until scallops are opaque throughout. Serves 4. |
