SPANISH PORK CHOPS 
4 to 6 pork chops
1 sliced onion
1 lg. can tomatoes
1 c. uncooked rice
Salt and pepper to taste

Arrange chops in iron skillet. Add enough water to cover meat. Slice onion on top. Spread rice over meat and onion. Pour tomatoes and juice over all. Season to taste. Cover tightly with aluminum foil. Bake at 400 degrees for 1 hour.
