CHOCOLATE TRUFFLE LOAF 
3 c. heavy cream
4 egg yolks
1 1/2 lbs. semi-sweet chocolate
3/4 c. corn syrup
3/4 c. butter
1/2 c. powdered sugar
1 tsp. vanilla

Mix 1/2 cup cream and egg yolks; set aside. Combine chocolate, corn syrup, and butter. Heat over medium heat until melted. Temper in cream/egg mixture and stir while cooking for 3 minutes. Cool to room temperature. Beat remaining cream to soft peaks. Add sugar and vanilla. Fold cream mixture into the cooled chocolate mixture. Pour into loaf pan lined with plastic wrap. Chill overnight. Serve slice pate; garnish with whipping cream, strawberry sauce, or sauce anglaise.
