SPINACH L'ORANGE 
1 (11 oz.) can mandarin oranges
1/4 c. chopped red onion
1 tbsp. corn oil
1 tbsp. red wine vinegar
2 tsp. Grey Poupon dijon mustard
1 tsp. sugar
Triscuits or other sm. crackers
Spinach leaves

Drain mandarin oranges and coarsely chop. Combine orange pieces with onion, oil, vinegar, mustard, and sugar. Set aside. On each cracker, place a bite size piece of spinach; top with teaspoonful of orange mixture. Serve immediately.
