BROWN OATMEAL BREAD 
1 c. old-fashioned oatmeal, uncooked
2 c. boiling water
1 1/2 tsp. salt
1 pkg. yeast and 1/2 c. warm water
1/2 c. molasses or brown sugar or white sugar
2 tbsp. oil
4 1/2 c. flour

Put oats and 2 cups boiling water together. Let cool to warm.

Dissolve yeast in 1/2 cup water. (Add 1/2 teaspoon of sugar to yeast and let it set for several minutes until it starts to work.) Let sit for 5 minutes.

Add molasses (dark moist bread) or brown sugar (lighter bread) or white sugar (quite light bread), oil and flour. Stir well.

Place in 2 oiled bread pans. Let rise until it reaches at least the top of the pan or 1/2 inch higher in a warm, draft-free place.

Bake at 375°F until top is golden brown and bread is light; inner temperature on a thermometer will be 190-200°F. This normally takes about 40 to 45 minutes.
