3-CHEESE MANICOTTI 
2 c. water
2 (6 oz.) can tomato paste
1/2 c. diced onion
1 can diced mushrooms
2 tbsp. parsley
2 tsp. oregano
2 tsp. salt
1 tsp. sugar
2 c. shredded Mozzarella cheese
1 c. ricotta cheese
1/2 c. Parmesan cheese
2 eggs, beaten
1/4 c. parsley
1/2 tsp. salt
1 pkg. manicotti shells, cooked and drained

Combine first 8 ingredients. Simmer uncovered for 30 minutes, stirring occasionally. Combine eggs, cheese, parsley, salt, and 1/8 teaspoon pepper; mix lightly. Stuff cooked shells with cheese mixture. Pour 1/2 of sauce in 9 x 13 inch dish. Pour remaining sauce over shells. Bake at 350 degrees for 30-35 minutes; cover with foil. Let stand 10 minutes.
