LINDA'S FRIED WALNUTS 
4 c. walnut halves & pieces (try to get halves or lg. pieces)
1/2-3/4 c. sugar
Salt
Vegetable oil
6 c. water

Bring water to a boil. Add walnuts and cook for about 2 minutes (at the boil). Rinse with hot water in a colander. Put hot walnuts into a large bowl and coat with sugar. Stir until sugar melts.

Heat about 4 inches vegetable oil in a heavy, deep pan. When hot, test fry one walnut. It should brown in about 1 minute. Carefully add walnuts (in 2 batches) to oil and fry until deep brown (use slotted spoon for this). Drain on paper towels, stir to keep from sticking together. Salt lightly before cooling completely. Store in an airtight container. Keeps well for about 2 weeks. These are very good. I give them for Christmas gifts!
