SOPAIPILLAS 
2 c. flour
2 tsp. baking powder
1/2 tsp. salt
4 tbsp. Crisco shortening
1/2 c. water (little more if needed)

Combine flour, baking powder and salt. Cut shortening into flour, add water and mix into a stiff dough. Knead on lightly floured board. Cover with light cloth and set for 15 minutes. Roll out thin and cut into 2 1/2 inch rounds. Fry small amount at a time in deep, hot oil, turn several times. It will puff up, take out and sprinkle with cinnamon sugar or plain sugar. Best served hot and with honey.
