SAVORY SALMON PATTIES | |
2 (6 1/2 oz.) cans salmon, drained & flaked 1 c. mashed potatoes 2 tbsp. prepared yellow mustard 1 lg. egg 1/2 c. shredded carrots 3/4 c. finely chopped yellow onion 1/2 tsp. paprika 1 tbsp. lemon juice 1/2 c. fine dry bread crumbs 2 tbsp. corn oil 1. In a medium bowl combine first 8 ingredients; shape into 8 patties. 2. Put the bread crumbs on a plate and coat patties with crumbs. 3. In a heavy 12 inch skillet heat corn oil over moderate heat for 1 minute; when hot, add the patties and cook about 3 minutes on each side or until golden brown. Transfer to a heated platter. Serves 4. |
