SAVORY SALMON PATTIES 
2 (6 1/2 oz.) cans salmon, drained & flaked
1 c. mashed potatoes
2 tbsp. mustard
1 lg. egg white
1/2 c. shredded carrot
1/2 c. chopped onion
1/2 tsp. paprika
1/2 tbsp. lemon juice
1/2 c. fine dry bread crumbs
1 tbsp. corn oil

In medium bowl, combine first 8 ingredients. Make into 8 patties. Put the bread crumbs on a plate and coat patties with crumbs. In a 12 inch skillet heat corn oil over moderate heat 1 minute. When hot, add the patties and cook 3 minutes on each side until golden brown. Transfer to a heated platter.
