GREEK ORANGE CAKE | |
1 c. butter 1 c. sugar 4 eggs 1 orange rind, grated 1 tsp. vanilla 1 c. yogurt 1/8 tsp. salt 2 1/2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 c. nuts, finely chopped Juice of 1 orange or 1/3 c. processed orange juice 1/2 c. sugar Beat and cream butter and sugar well, add eggs, orange rind, vanilla, yogurt and continue beating. Sift flour with salt, baking powder, baking soda and add to mixture. Continue beating until well mixed and add nuts. Pour mixture into well greased angel food pan and bake in preheated 350 degree oven for 45 minutes or until toothpick in center comes out clean, make glaze by mixing orange juice and sugar. Remove cake from oven with a long-tined fork prick top of cake deeply. Spoon half of glaze over hot cake, in pan, let stand 10 minutes. Invert onto serving plate. Spoon remaining glaze over cake. |
