GREEN PEA CASSEROLE 
1 sm. can LeSueur peas, drained
1 sm. onion, chopped
1 sm. jar pimentos, diced
1 can cream of mushroom soup
1 c. grated cheddar cheese
1 pkg. Ritz crackers
1 can water chestnuts, chopped

Mix together peas, onions, pimentos, soup, cheese, and water chestnuts. Roll Ritz crackers in melted butter.

Let stand for 15 minutes and sprinkle on top of casserole. Bake at 350 degrees for 30 minutes.
