APPLE FRITTERS 
1 egg, beaten
1 c. milk
1 c. finely chopped or grated unpeeled apples
1/4 c. sugar
1/4 tsp. salt
1 tsp. grated orange peel
3 tbsp. orange juice
1/2 tsp. vanilla
2 c. all-purpose flour
1 tbsp. baking powder
vegetable oil (for frying)
confectioners sugar

In a mixing bowl, combine egg, milk, apple, sugar, salt orange peel, juice and vanilla. Stir together flour and baking powder; fold into egg mixture, stirring just until moistened.

In a deep fryer, heat oil to 350°F. Drop batter by rounded teaspoonfuls. Fry until deep golden brown, about 3 to 4 minutes, turning once. Drain fritters thoroughly on paper towels. Roll in sugar or sift sugar over them.

Yield: about 3 1/2 dozen.
