FAMOUS POTATO LATKES 
4 potatoes
1 onion
1 egg
1/2 tsp. salt
3 tbsp. flour
1/2 c. vegetable oil

Wash potatoes and peel them. Grate them and place in a bowl of cold water to cover (to keep them from turning brown.) Peel onion and chop finely or grate. Beat egg in large mixing bowl. Add onion, salt, pepper, and flour. Drain potatoes in a colander and squeeze excess water our with your hands.

Add potatoes to other ingredients and stir until well blended. Heat half the oil in a skillet over medium heat. Drop potato mixture in by the tablespoon and cook until browned on both sides. Drain on paper towels. Continue until mixture is used up, adding more oil as necessary. Serve warm with sour cream.
