SALMON MOUSSE 
1 lg. can salmon (pink OK - it's cheaper)
1 env. Knox unflavored gelatin
2 tbsp. lemon juice
1 sm. sliced onion
1/2 c. boiling water
1/2 c. mayonnaise (I use Hellmann's)
1/4 tsp. dill
1/8 tsp. paprika
1 c. light cream or homogenized milk

Put in blender or food processor at high speed: gelatin, lemon juice, boiling water and onion. After 40 seconds, add 1/2 cup mayonnaise, paprika, dill and salmon. Blend briefly at high speed.

Add milk or cream by 1/3 cup, 1/3 cup and 1/3 cup. Pour into wet mold and chill until firm. Unmold onto dish and surround with sliced, seeded, cucumber or Ritz crackers.

If milk is used, may want to add a little more gelatin.
