STUFFED GREEN PEPPERS 
1 lb. ground chuck
2-3 med. bell peppers
1 lg. onion
2 sm. cans tomato sauce
1/2 c. shredded Mozzarella cheese
1 bag boil-in-bag instant rice

Brown meat and onion in skillet. Boil pepper in medium saucepan until tender, about 5 minutes. Combine meat, cooked rice, salt, and pepper to taste. Fill bell peppers 3/4 full with meat and rice mixture. Pour tomato sauce over the top, and bake, covered, for 30 minutes until hot and bubbly. Top with cheese and broil until hot and melted.
