VIDALIA ONION PIE 
5 med. Vidalia onions
1 stick melted butter
Grated Parmesan cheese
Crumbled Ritz or Town House crackers
1 pkg. grated Cheddar cheese

Slice onions and saute in butter until limp but not brown. Place 1/2 of the onions into casserole dish. Sprinkle with Parmesan cheese generously. Layer crackers over cheese. Repeat layers. Cover with Cheddar cheese. Bake at 325 degrees F. for about 20 minutes or until light brown.
