ERIC'S VERMONT HOME BAKED BEANS | |
1 lb. navy beans 1 tsp. baking soda 2 tsp. dry mustard 1/2 cup ketchup (Hunts) 1 tsp. salt 1/2 cup brown sugar (use 3/4 cup for added sweetness) 1/4 cup sugar 1/4 cup molasses 1/4 cup maple syrup 1 large onion (sliced) 1/2 lb. thick sliced bacon (slices cut in half) fresh ground pepper Wash and soak beans with baking soda overnight, cover beans with at least one inch of water. Morning, pour beans into a large sauce pan, bring to boil, reduce heat and simmer uncovered for 30 minutes. In a separate bowl mix other ingredients except for the onion and bacon. Rinse beans in cold water and place in Crock-Pot. Pour mixture over beans, add bacon and onion, then add enough HOT water to cover the mixture at least 1 1/2 inches. Add ground pepper and mix well. Set Crock-Pot to HIGH and slow-cook for 7 hours, adding more hot water if needed. Note: Crock-Pot's differ depending on the style, it may take more or less time to cook this masterpiece.
