CHICKEN CASSEROLE 
4 chicken breasts
3 carrots, coarsely chopped
1 med. onion, coarsely chopped
1 (4 oz.) can mushrooms, drained
1 can cream of mushroom soup
1 (8 oz.) sour cream
1/2 c. broth
1 (6 oz.) Stove Top stuffing

Stew chicken breast, (cover with water) carrots, onion, and salt and pepper (to taste) for 1 hour. Bone, skin and cut up chicken.

Layer chicken, carrots, onions, and mushrooms in 8 x 10 inch baking dish. Mix 1 can cream of mushroom soup, sour cream, and broth. Pour over chicken. Prepare Stove Top Stuffing according to directions then spread over top. Bake at 350 degrees for 30 minutes.
