POTATO SALAD FOR 50 PEOPLE 
7 1/2 lb. of potatoes
1/2 tsp. black pepper
1 qt. of chopped celery
1 qt. of chopped, cooked eggs (hard boiled)
2 c. mayonnaise
2 c. cooked dressing
Red and green peppers
1 pt. of pickles
A little vinegar

Mix celery, eggs and pepper. Mix mayonnaise and dressing, red and green peppers, pickles and vinegar. Add this to cooked potatoes cut in cubes. Add black pepper. Best made the night before.

COOKED DRESSING:

2 egg yolks
1 tbsp. flour
1 tsp. dry mustard
2/3 c. milk
1/4 stick butter
1/3 c. vinegar
1 1/2 tbsp. sugar
1 tsp. salt

Mix dry ingredients, add egg yolks and milk. Boil vinegar, sugar and butter; pour over first mixture and cook until thick.
