BEEF JERKY | |
3 lb. round steak or flank steak Soy sauce Pepper Lemon juice Garlic salt Trim off all of fat (it spoils) as you cut the steak in 1/2 inch strips as long as you can make them. Length will depend on how the fat and cords run through meat. Marinate one hour in soy sauce. Sprinkle strips with lemon juice, garlic salt, and pepper. Place strips directly on racks in oven; do not have them overlapping any where. Bake 12 hours at not higher than 140 degrees (or on warm). Jerky is done when chewy, not brittle. Do not put foil directly under the meat; it's suppose to dry out. |
