CALIFORNIA CHICKEN AND RICE CASSEROLE | |
COATING FOR CHICKEN: 1/2 c. flour 1/2 tsp. salt 1/2 tsp. paprika 6 chicken breasts 6 tbsp. oil 1 (4 oz.) can chopped mushrooms 1 can mushroom soup (or cream of chicken) 1 c. uncooked UNCLE BEN'S® rice 1 (6 oz.) can orange juice 1 1/2 soup cans of water 1/4 tsp. nutmeg 1 tbsp. brown sugar 1/4 c. sherry Blend flour, salt and paprika, coat chicken and brown in hot oil. Remove chicken and brown mushrooms in oil (reserve liquid). Place uncooked rice in 9 x 13 inch pan. Place browned chicken on top of rice and scatter mushrooms over chicken. Blend soup, orange juice, brown sugar, nutmeg, mushroom liquid and water. Mix well and pour over chicken. Cover with foil and bake at 350 degrees for 1 hour. Pour sherry over chicken and bake uncovered for 15 minutes longer, or until rice has absorbed liquid and chicken is done. |
