GOURMET CHICKEN CASSEROLE 
1 pkg. UNCLE BEN'S® long grain and wild rice
1 can cream of chicken soup
1 can cream of celery soup
1 can cream of mushroom soup
1/2 c. milk
1/4 c. melted butter
1/2 c. sherry
1 pkg. shaved almonds
Parmesan cheese
10 chicken breasts (boneless, skinless, cut in half (20 pieces)

Grease 9 x 13 inch pan. Sprinkle rice on bottom. Mix soups together with the melted butter, milk, and sherry. Pour small amount on rice. Place chicken pieces on rice. Cover with the rest of liquid mixture. Sprinkle almonds and cheese on top.

Bake at 275 degrees, uncovered, for 2 1/2 hours. Serves 12 amply.

I have been baking this casserole for 35 years. It is the recipe that is most requested from people that have had it in my home. The only thing I do differently is, to add some of the soup mixture to the rice, so it will be thoroughly moistened. Then spread on the bottom of pan (no dry crunchy rice this way.)
