COCONUT CREAM DESSERT 
2 stacks Ritz crackers
1 1/2 sticks butter
2 pkg. instant coconut cream pudding
1 1/2 c. milk
1 tsp. coconut extract
3/4 of a half-gal. carton of softened vanilla ice cream
9 oz. container Cool Whip, thawed
Flaked coconut

Crush crackers and melt butter; mix together and press in bottom of a 9 x 13 inch pan. Pat down firmly. Blend pudding mix and milk with electric mixer - fold in softened ice cream and extract and blend until smooth. Pour on top of crumb mixture. Spread softened Cool Whip over top. Freeze until a few hours before serving and then store in refrigerator (to thaw) and slice in squares when ready to serve.
