ZUCCHINI-TOMATO CASSEROLE 
3 c. sliced zucchini
3-4 tomatoes, peeled and chopped
1/2 c. onion, chopped
2 tbsp. butter
1/2 tsp. pepper
1/4 to 1/2 tsp. Italian seasoning
1/3 c. Italian bread crumbs
1/2 lb. grated Mozzarella cheese
1/3 c. Parmesan cheese
Dots of butter

Saute onion in butter. In buttered 1 1/2 quart casserole, layer half of zucchini, onion, tomatoes, Italian seasoning, bread crumbs and cheeses. Repeat layers and dot with butter. Bake at 350 degrees uncovered for 45 minutes. Check after 30 minutes and add 2 tablespoons water, if dry. 6 to 8 servings.
